This premium coffee is cultivated by smallholder farmers from Molino Norte, Matagalpa, Nicaragua. Here, diverse varieties like Yellow and Red Catuai, Catimor, and Parainema thrive at altitudes between 900-1590 meters in fertile clay mineral soil. The beans undergo a meticulous fully washed process, fermented for 12-14 hours, and then carefully dried on patios and raised beds. This traditional approach ensures a clean, bright, and incredibly flavorful cup, showcasing the unique character of Nicaraguan coffee.
